Cauliflower has to be one of the most versatile of vegetables even though most folk tend to just boil it and maybe add some cheese sauce to it.  Recently I've been trying out several new recipes that I've come across along the way... Cauliflower rice for instance ... what a revelation especially if you're on a low carb diet... fabulous served with curries. You'll also find my Roasted Cauliflower Tikka recipe on my blog,( Roasted Cauliflower Tikka)  it's wonderful served as a side dish or even on it's own.  Of course there's also the traditional Cauliflower Cheese recipe available here too if that's what you fancy ( Cauliflower Cheese) or finally try my Cauliflower & Broccoli Tempura a delicious starter or perfect served with drinks as a hot canape.

This Spiced Stir-fried Lebanese Cauliflower dish was a hit on Instagram last night and there were requests for the recipe. I've typed it out whilst I remember how I made it. You'll find it below.

Recipe:-
1 medium sized cauliflower broken into bite sized florets
I large onion finely sliced
4 cloves of garlic crushed
3 tbsps of either Rapeseed or good Olive Oil
1 level tsp Turmeric
1 level tsp Ground Coriander
1 level tsp Ground Cumin
1 tsp sea salt
a few coriander (cilantro) or Italian parsley roughly chopped
Steam the cauliflower for around 2-3 minutes until almost tender but still with plenty of bite.
Heat the oil in a frying pan or wok and add the onions
Fry until soft, add the garlic and continue to cook for a minute or two
Add the spices & salt, stir around then pop in the cauliflower.
Keep stirring until all the florets are coated
Place into a serving dish, sprinkle over the coriander or parsley leaves.
Serve either warm or even better just at room temperature.
Ours was accompanied by Souvlaki, Bulgar wheat pilaf & tzatziki
.... so delicious
